Hi Zanzia - We use Wisdom SweetLeaf Stevia, I get it from iHerb.com. We eyeball the stevia these days, but I would say it's close to a tablespoon. You could start with less, blend it, and give it a taste and then add more if it doesn't taste sweet enough. Let me know what you think if you try the recipe and/or the stevia.

Hi, Just a quick question:
Do you really use 1 tablespoon of stevia? If so, what brand are you using?
When I use any more than 1/2 teaspoon of the stuff I have I find the results sickeningly syrupy. I'd love to find a brand that can be more easily measured.
Thanks!
