I have so many pictures from our adventure, it’s so tough to choose my favorites. Looking back through them gets my tummy jumping, remembering how fun and exhilarating it was. I thought I would share a few more of my favorite moments, since it seems that many of you are interested in hearing more about it:
I am a STRONG woman! This picture was taking in Colorado, at the “Garden of the Gods,” where signs say “no climbing on the rocks.” Opps, don’t tell.

Cheers to a fabulous trip. We stayed at the Sedona Rouge in Sedona, and the staff surprised us with champagne and chocolate covered strawberries. It was so serene, to toast each other, looking out on our balcony at the sun setting over the mountains, casting its rays on the red rocks, highlighting their vastness. Definition of the word AWE.

Favorite meal of the trip: Elote Cafe
Everything from the cocktails to dessert was fabulous. The chef, who studied in five regions of Mexico, even came out to chat with us for a few minutes. All I can say is this is what real, authentic Mexican food is all about. I can’t say enough about how fresh and flavorful the meal was. Highlight of the trip for sure.
Cocktail: Eldorado~ Hornitos Reposado, Cointreau, house sour and fresh orange
…I am pretty picky about margaritas. I don’t like the really fake tangy flavor that you get in many *mainstream* Mexican restaurants. Well, this margarita knocks the pants off the bottled mix version.

Appetizer: Guacamole~ Mashed Avocado with cilantro, jalapeno and lime

Main Course: Puerco en Cascabel~ Slow roasted all natural pork with cascabel sauce and queso oaxaca

served with rice and beans…

Dessert (split this mondo chocolate extravaganza with Ryan): I can’t remember the name, but it was a chocolate flourless mouse cake, which the bartender actually served to us with an amaretto flavored tequila shot called Almendrado, which sounds weird, but was so good and the perfect compliment to the non-sweet chocolate flavor of the dessert.

Favorite Sandwich from Sedona Memories Cafe: Turkey, spinach, provalone cheese, sprouts, sunflower seeds, and a little cream cheese, on whole wheat squaw bread. Delish!

There is just something fantastic about heading out on the town with a hot date in Vegas… I love Vegas. It makes me feel all warm inside.
