There is actually some controversy as to this:

I did some research on the subject for a post about &quot;authentic&quot; Caesar salad a few months back on my blog and discovered the the anchovies may have actually been part of a different (&quot;Avaitor&#039;s&quot;) salad, created by the brother of the Caesar Cardini (generally credited with inventing Caesar salad).  Also, I feel reasonably confident in saying that the &quot;traditional&quot; salad, as it was in Mexico, probably used limes instead of lemons.  The inclusion of both lemons and anchovies  in the modern &quot;traditional&quot; version is in part due to the rendition Julia Child wrote about after speaking with Caesar Cardini&#039;s granddaughter.
