Day 11 | Clean Eating Challenge

Today was another sleep-in-ish day… Got up at 7 AM. Hit the snooze about 4 times. Going for a run later in the day.

Breakfast

I made overnight oats (here’s another recipe that shows how to make them) again, 1/2 Irish steel cut, 1/2 5-Grain.

Ryan and I both really enjoy having a hot breakfast, but we like to add in a variety of different kinds of hot-cereal grain type items to the mix. Today’s bowl included:

  • 20 grams of steel cut oats, 20 grams of the 5-grain mix
  • water
  • 1/4 banana cooked with the oats (added in the morning)

Then, when the oats were done cooking, I added:

  • 1/4 tsp cinnamon
  • 1/4 cup full-fat small curd cottage cheese
  • 1 tsp stevia
  • toppings: another 1/4 of the banana, 1/2 tsp Trader Joes Sunflower Seed Butter, small handful of Barbara’s Shredded Oats (for crunch)

Voila! Plus Cinnamon Swirl flavored coffee (with vanilla stevia and Organic Pastures raw whole milk). Strange how raw full-fat milk looks in the coffee, seems like after it has been sitting for a few minutes, it separates a little. (Check out this post for my thoughts on coffee.)

This is one of my favorite breakfast concoctions. The cottage cheese makes it extra thick and creamy. We are down to the bottom of the jar of sunflower butter too, which mean… nut butter jar oats tomorrow!

Speaking of raw milk, I actually have met the folks at Organic Pastures at the Santa Monica farmers market, and the woman was explaining the following to me. I am copying and pasting this from their FAQ page:

Why do you say that “Raw Milk is Alive”?
Natural organic raw milk has in it vitally important living things. These include the following: beneficial bacteria, enzymes (including lipase, protease. and other), lactase forming bacteria, and many enzyme based pathogen killing systems. The common practice of pasteurization inactivates or dramatically reduces the effects of these important active (living) elements. As a result, you may be lactose intolerant when drinking pasteurized milk, but not lactose intolerant when you drink raw milk. This is because lactase enzymes are being formed when you digest raw milk. That is why we say, “only living milk brings life.”

What happens to bacteria in pasteurized milk after pasteurization?
After pasteurization, bacteria found naturally in milk are killed. During the high temperature heating process, cell bodies of these bacteria are ruptured and their contents are spilled, releasing intracellular proteins. This causes many milk drinkers to suffer histamine or allergic reactions. Almost all of these same consumers can drink raw milk and not have allergies. The high levels of bacteria permitted in milk intended for pasteurization are still found in pasteurized milk; they are just dead and not removed by the process.

Interesting stuff.

Lunch

So… this was supposed to be my snack. I had the full-fat Fage Greek yogurt again with a small pear. The pear was so sweet yet crisp.

A few hours later I went for a long run outside on the beach/bluff path. I made sure to appreciate the fact that I am running outside in December, with blue skies in 60 degree weather. This… is why we moved here. Well, part of the reason anyway.

By the time I got home and showered up, it was getting kinda late, so I decided to hold off until dinner. I’m really shocked that I didn’t get hungry for lunch until it was almost dinner time. ??

Dinner

Ryan was running late so I snacked on some veggies as I made dinner and a few celery sticks with homemade hazelnut butter.

When he got home, he had a present! Actually, it was a present from his work. YAY. Goodies!! These are all products from companies that Roll International owns, the parent company of FIJI Water, where he works. Thanks Roll and Fiji!! Love those pistachios… especially the salt and pepper flavor. “Get crack’n!”

For dinner I cooked up some thinly sliced beef sirloin with some salt and pepper, poured off the liquid and served it over a big salad. Other ingredients included:

I added a little more spinach at the end, so you can’t really see a lot of the toppings. Apologies.

If you are wondering why you aren’t seeing chicken and turkey in these meal plans… they are two things on my food allergy list. Sounds weird I know, but since I’ve stopped eating them, I’ve noticed some pretty dramatic differences in my complexion.

A little while later, I sampled a few salt and pepper pistachios…

Yay…love getting fun gift boxes..especially appreciate the ones filled with healthier food items!!

It was in the 40s here in Texas yesterday and again today….brrr! Would so love to get back outside to run but I just don’t like running in cold weather! Lucky you to have the glorious warmer temps right now, for sure!

Wasn’t The Office crazy?! Love that show!

I’m glad I got that run in yesterday, because today was rainy all day and the rest of the weekend it’s supposed to be the same. It really makes a huge difference, doesn’t it, to be able to run outside in the fresh air and sun!

I loved when Michael called David’s daughters school to get patched through to him. LOL.
