Day 8 | Clean Eating Challenge

Last night I had a little trouble falling asleep, I was so revved up from the second to last episode of Dexter. The next one is the season finale, can’t wait. So I slept in a little this morning… til 7:30.

Breakfast

Breakfast was yummy. I tried a new kind of nut butter – Nuttzo. It’s a mix of a few different kinds of organic nuts, plus flaxseeds. It was yummy.

I made oatmeal with:

  • 1/2 cup (40g) rolled oat
  • 1 cup water
  • 1 banana, cooked with the oats
  • pinch of salt
  • about a tsp of stevia
  • dash of vanilla extract
  • 1/2 scoop vanilla whey protein powder (mixed with water before adding to the oats at the end)
  • 1 small crumbled ginger snap cookie
  • 1 tbsp Nuttzo

I also had some blueberry crumble coffee from Schuil Coffee with skim milk and stevia.

About an hour later I hit the gym and got in a really good Action Hero Babe workout. Steamed up the car on the way home. Apparently I am just getting THAT HOT. icon wink Day 8 | Clean Eating Challenge

Snack

After I got back from my visit to the doctor, I was HUNGRY and soaked… it’s been raining all day. Ya know, there is something cleansing about a good all-day rain! I actually really like it. I still haven’t done my full blown grocery shopping for the week yet, because I was holding off until I did the food allergy testing today, so pickens were slim. I’ll be going tomorrow to stock up. I am happy to report that this doctor did not find an allergy to ALL greens, just specific ones, so I can have my spinach and lettuce back. {happy dance, happy dance}

I whipped out the blender and put together a quickie shake – raspberries, 1/2 banana, 1/2 scoop vanilla whey, and a cup of milk. I love that shakes with milk get so frothy that you have to go back 2-3 times to drink the contents of the blender…

Lunch

Lunch was kinda small, since my shake was so filling. Had I had a stocked frig, I would have made a salad. I decided to make a grilled cheese with ezekiel sprouted bread, and a mix of cheddar and the Asadero cheese. I used like a shaving/sliver of real butter on the outside of the bread, to give it the golden crispiness. It really doesn’t need much at all. If I had cooking spray on hand, I could have given it like a 1/2 second spritz.

Dinner

Ryan had to work late tonight, so rather than eat my hand because I was getting so hungry, I had my dessert before dinner. I make this concoction of protein powder and nut butter OFTEN. Here is the recipe. You can switch out different types of protein powders, as well as, different flavors and use different types of nut butters too. Also…. you can sprinkle things on top like goji berries, cacao nibs or powder, cereal, granola, whatever sounds good. Today I made it with vanilla protein powder and Barney Butter.

day 8 dinner 2 Day 8 | Clean Eating Challenge

For dinner I made sirloin steaks and steamed green beans and carrots. I seared the sirloin steaks (with a little salt and pepper) first in a pan on the stove top (each side) and then I put them in a 350° F oven for 8 minutes. Also, these are my smaller, salad plates…. figured I should let you know, so you can gauge portion size. This was about 4 oz of sirloin, and about a cup and a half of veggies.
