1/4 cup (40g) steel cut oats
1/2 cup water
pinch of salt
1/2 cup skim milk (or your favorite milk substitute)
1/2 medium banana, sliced into thin pieces
1/4 cup canned pumpkin

1 tsp stevia
1/4 tsp pumpkin spice

Ingredients
3/4 cup whole wheat flour
2 tbsp cocoa powder
2 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1 tsp cinnamon
1 cup pumpkin puree
1/2 cup Splenda
1 tsp vanilla extract

Pumpkin Bran Muffins

Dry Ingredients:
1 cup wheat bran
1-1/3 cup whole wheat flour
1-1/3 tsp baking powder
1-1/3 tsp baking soda
2 tsp cinnamon
1 tsp all spice
1/2 tsp freshly grated nutmeg
Wet Ingredients:
1 large egg
1-1/3 cup pure pumpkin, canned
2/3 cup low fat buttermilk
2/3 cup honey
1 tsp vanilla
