Directions
Mix all ingredients together in a small bowl. Consistency will be quite thick and almost sticky to begin, but you may continue to whip and add more water until it reaches a consistency of your liking. Enjoy.

Ok, it’s crazy that you re-linked to this…I was trying to figure out a way to recreate this peanut butter pie that I had at my mom’s place made by the Amish. There is no way I would eat it as is now, but this sounds like I could pop it into your pumpkin cheesecake “crust” and have a nice alternative! Yum!

Anne – Great idea! Altho, I think you might need to add some milk or yogurt to bring more volume to this recipe so that it fills up the crust. Actually, what you could do is combine this recipe with the banana ice cream recipe, by folding this mixture into the banana whip, which I think would give you more volume, for not a lot of calories. Let me know what you think!
