Ingredients
- 1/2 cup (40g) rolled oats
- 1/2 cup skim milk (or your favorite milk substitute)
- 1/2 apple, peeled, cored, and chopped
- 1/2 cup water
- pinch of salt
- 1/4 medium banana, sliced into thin pieces
- 1 tsp vanilla extract (Best. Vanilla. Ever.)
- 1 tbsp (6.5g) flaxseed meal
- 1 tsp Splenda brown sugar
- 1/8 tsp pumpkin spice
- 1/4 tsp cinnamon
- 10 g granola
- 0.2 oz toasted walnut pieces
Directions
In a medium size pan, heat the oats, milk, apple, water, and salt over medium heat. Once the mixture begins to simmer, approximately 5-6 minutes, turn it down to medium low and cook for another 3-4 more minutes to allow the apples to soften. Then turn the heat back up to medium and stir in the sliced banana. Continue to stir until the banana breaks down and the mixture thickens.
I really like the texture and thickness that the banana adds. Once it cooks down, you don’t really have many banana chucks, but just a hint of banana bread type flavor throughout and thick, creamy oats.
Next add the vanilla, flaxseed meal, Splenda, cinnamon, and pumpkin spice and stir until incorporated. I used Splenda brown sugar as the sweetener to change things up a bit, and to add that brown sugar flavor, but you could certainly use stevia instead.
Pour into a serving bowl and top with granola and toasted walnuts. Words cannot describe how awesome this bowl of oats was….SOOO GOOD. Definitely one of my favorites.

That looks amazing, I’m so glad I saw your post about this on dailySpark. I’m wondering about the banana, does it flavor the oatmeal much? I’m not a big fan of banana with anything but peanut butter, lol. Speaking of which, I’m not sure if you have it here or not (I’m working my way down the 30 days) but peanut butter (chunky) and banana (very ripe) oatmeal is my favorite from my arsenal. I’m looking forward to trying out yours!

Ya know, the banana is not so much for the flavor (most times I don’t even really notice the banana flavor actually), but for the volume and texture that it adds to the oats. I got the banana idea from Kath @ KathEats.com (ps you’ve got to check out her ode to oatmeal) and have been using it ever since. I HAVE tried crunchy pb and banana, soooo good. Actually one of the 30-day oatmeal recipes uses both, and resembles honey nut cherrios…a favorite of mine, from my youngin days.
