Ingredients
- 1/2 cup (40g) rolled oats
- 1 to 1-1/2 cups water*
- pinch of salt
- 1/2 medium banana, sliced into thin pieces
- 1 tsp vanilla extract
- 1 tbsp flax seed meal
- 1 tsp stevia
- 1/4 tsp pumpkin spice
- 1/4 oz toasted walnut pieces
* Depending on whether you like your oatmeal thick or creamy and a bit thinner. You could start with 1 cup of water and add more if necessary. You could also sub in milk (or your favorite milk substitute) too.
Directions
In a medium size pan, heat the oats, water, and salt over medium heat. Once the mixture begins to simmer, approximately 5-6 minutes, stir in the sliced banana. Continue to stir until the banana breaks down and the mixture thickens*. Add vanilla, flax seed meal, stevia, and pumpkin spice, and stir until incorporated.
Pour into a serving bowl (or empty nut butter jar) and top with walnuts.

Hi Sheila, I’m not eating gluten or dairy at the moment, so made this recipe with 1/2 cooked brown rice and 1/2c malt free soy milk. It came out kind of like a rice pudding – very nice, thanks!
