Banana Flax Oatmeal with Toasted Walnuts

Ingredients

  • 1/2 cup (40g) rolled oats
  • 1/2 cup skim milk (or your favorite milk substitute)
  • 1/2 cup water
  • pinch of salt
  • 1/2 medium banana, sliced into thin pieces
  • 1 tsp vanilla extract (Best. Vanilla. Ever.)
  • 1 tbsp (6.5g) flaxseed meal
  • 1 tsp stevia
  • 1/4 tsp pumpkin spice
  • 0.2 oz toasted walnut pieces

Directions
In a medium size pan, heat the oats, milk, water, and salt over medium heat. Once the mixture begins to simmer, approximately 5-6 minutes, stir in the sliced banana. Continue to stir until the banana breaks down and the mixture thickens. Add vanilla, flaxseed meal, stevia, and pumpkin spice, and stir until incorporated.

Pour into a serving bowl and top with toasted walnuts and an extra sprinkle of pumpkin spice.

Hi Sheila, I’m not eating gluten or dairy at the moment, so made this recipe with 1/2 cooked brown rice and 1/2c malt free soy milk. It came out kind of like a rice pudding – very nice, thanks!
