Berry Yummy Oats with Honey

Ingredients
1/2 cup (40g) rolled oats
1/2 cup skim milk (or your favorite milk substitute)
1/2 cup water
pinch of salt
1/2 medium banana, sliced into thin pieces
1 tsp vanilla extract (Best. Vanilla. Ever.)
1 tbsp (6.5 g) flaxseed meal
1 tsp honey
1/2 cup fresh mixed berries (separated)

Directions
In a medium size pan, heat the oats, milk, water, and salt over medium heat. Once the mixture begins to simmer, approximately 5-6 minutes, stir in the sliced banana and 1/4 cup of the mixed berries. Continue to stir until the banana breaks down and the mixture thickens, typically about 3-4 more minutes. I also smashed the berries a bit on the sides of the pot, to help them break down as well. Add the vanilla and flaxseed meal, and stir until incorporated.

Pour into a serving bowl and top with honey and last 1/4 cup of berries.

I just wanted to pass on this recipe for Sweet Potato, Banana Oatmeal. http://fitandhealthygal.blogspot.com/ I love anything sweet potato and just felt like putting one in my oatmeal this morning. I’ve really enjoyed your recipes and tried quite a few of them. I don’t think you’ve used sweet potatoes yet. Give it a try!
