German Chocolate Oatmeal

Version #1 Ingredients

  • 1/2 cup (40g) rolled oats
  • 1 cup water*
  • 1/4 banana, sliced thinly
  • pinch of salt
  • 1 tsp vanilla extract
  • 1-1/2 tsp unsweetened cocoa powder (I use Penzeys Spices Dutch Process High Fat Cocoa)
  • 1 tbsp flax seed meal
  • 1/4 tsp cinnamon
  • 1 tsp stevia
  • 5 g unsweetened coconut shavings
  • 1/2 oz pecan pieces

* May need to add a little more water when you add the cocoa powder if the oats are too thick. You want the texture to be creamy not stiff.

Directions

In a medium size pan, heat the oats and water over medium heat. Once the mixture begins to simmer, approximately 5-6 minutes, stir in the sliced banana and salt. Continue to stir until the banana breaks down and the mixture thickens. Add the vanilla, cocoa powder, flax seed meal, cinnamon, and stevia, and stir until incorporated.

Pour into a serving bowl and top with coconut and pecans.

Version #2 Ingredients

  • 1/2 cup (40g) rolled oats
  • 1/2 cup skim milk (or your favorite milk substitute)
  • 1/2 cup water
  • 1/2 banana, sliced thinly
  • pinch of salt
  • 1 tsp vanilla extract
  • 1 tsp cocoa powder
  • 1 tbsp flax seed meal
  • 1 tsp stevia
  • 10 g sweetened coconut shavings
  • 1 oz pecan pieces

Directions

In a medium size pan, heat the oats, milk, water, and salt over medium heat. Once the mixture begins to simmer, approximately 5-6 minutes, stir in the sliced banana. Continue to stir until the banana breaks down and the mixture thickens. Add the vanilla, cocoa powder, flaxseed meal, and stevia, and stir until incorporated.

I really like the texture and thickness that the banana adds. Once it cooks down, you don’t really have many banana chucks, but just a hint of banana bread type flavor throughout and thick, creamy oats.

Pour into a serving bowl and top with coconut and pecans.

This serving size was made for Ryan so, if the calories are too high for you, you could adjust the amount of pecans and coconut used.

I was directed to your site by Val Waters, and I have to say, WOW! I had no idea oatmeal could be so amazing. Tried the German Chocolate today, and even my kids were asking for more. Thanks for making breakfast my new favorite meal.
