Maple Trail Mix Oatmeal

Ingredients
1/2 cup (40g) rolled oats
1/2 cup skim milk (or your favorite milk substitute)
1/2 cup water
pinch of salt
1/2 medium banana, sliced into thin pieces
1 tsp vanilla extract (Best. Vanilla. Ever.)
1 tbsp (6.5 g) flaxseed meal
1/4 tsp cinnamon
1 tsp maple syrup (I used sugar-free)
30g Wild Ginger Harvest trail mix (from Whole Foods bulk area)
Directions
In a medium size pan, heat the oats, milk, water, and salt over medium heat. Once the mixture begins to simmer, approximately 5-6 minutes, stir in the sliced banana. Continue to stir until the banana breaks down and the mixture thickens. Add the vanilla, flaxseed meal, and cinnamon, and stir until incorporated.
Pour into a serving bowl and top with maple syrup and trail mix.
This was really good, except the next time I might choose a different type of trail mix. The ginger pieces weirded me out a little. They were almost to sweet for me. Loved the chocolate chips and cashews though.
