Tropical Mango Coconut Oatmeal

Ingredients

  • 1/2 cup (40g) rolled oats
  • 1 cup water
  • 1/2 mango, cubed (fresh or frozen)
  • pinch of sea salt
  • 1 tsp vanilla extract
  • 1 tsp stevia (could also use agave or yacon syrup)
  • 1 tbsp hempseed
  • 1 tsp coconut shavings, unsweetened
  • 0.2 oz raw cashews

Directions

In a medium size pan, heat the rolled oats, water, and mango over medium heat. Continue to stir with a spatula, whipping the oats, and smashing the mango on the sides of the pan, to help break them down. Keep stirring and whipping occasionally until the mixture thickens to the desired consistency. Add the sea salt, vanilla, stevia, hempseeds, and stir until incorporated.

Pour into a serving bowl and top with coconut and cashews. Enjoy somewhere in the sunshine, preferably on a beach, or at least somewhere where you can pretend you are in the tropics.

I have only had mango a few times in my life. So, I thought I was overdue to try them again. I was really happy with this recipe, and I will definitely be having this oatmeal again!
